Kidney Stone Diet Safe Tips: There is a story behind these protein bars. My friend down the block just had her condo flooded, and obviously, it has been rough. So I made these bars, put them in a wrapper, and tied them up with a purple ribbon (her favorite color). Her dog and Finn are also best friends. They have to go to a hotel for a few days while her place gets dried out, so I thought these would cheer her up in her hotel room for breakfast.
I use this
high fiber oat cereal as it is the best. It’s a staple in my meal plan recipes and has excellent fiber, protein and is low oxalate. I have it on subscribe and save I use it so much.
I used my
vanilla paste, which provides a richer flavor than extract, and also
cake batter extract (not listed in the ingredients bc it is not offered in my nutrition calculator). The cake batter really ups the flavor. I used chopped pecans, so I didn’t have to chop them myself!
These bars are high fiber, vegan (use nondairy milk), high protein, low sodium, zero added sugar, and just plain good. If you need a bit more sweetness, you can add some zero-sweetened brown sugar. I like
Swerve—you do you. A dollop of plain Greek yogurt on top will give you more protein if you wish and I also used my pumpkin spice recipe.
