Ingredients

  • 2 bananas
  • 1 tsp of vanilla extract
  • 1/4 cup chopped pecans
  • 1/3 cup pumpkin puree
  • 2 tsp pumpkin spice
  • 1 tsp baking powder
  • 1 cup Fairlife Core Power Vanilla Milkshake
  • 1/2 cup pumpkin seed protein powder
  • 1 1/2 cups of Bob Red Mill High Fiber hot cereal

Instructions

  1. Preheat oven to 350.
  2. Mix dry ingredients into a large bowl.
  3. In a bowl, mash bananas and add wet ingredients.
  4. Add dry to wet ingredients and mix.
  5. Add mixture to granola mold (see notes).
  6. Bake for 30 minutes.

Kidney Stone Diet Safe Tips: There is a story behind these protein bars. My friend down the block just had her condo flooded, and obviously, it has been rough. So I made these bars, put them in a wrapper, and tied them up with a purple ribbon (her favorite color). Her dog and Finn are also best friends. They have to go to a hotel for a few days while her place gets dried out, so I thought these would cheer her up in her hotel room for breakfast.
 
I use this high fiber oat cereal as it is the best. It’s a staple in my meal plan recipes and has excellent fiber, protein and is low oxalate. I have it on subscribe and save I use it so much.
 
The mold I used to make the perfect bar form is found here. And the wrappers here, along with the purple bakery string. Makes for great gifts. If you do not have a granola mold, use an 8×8 glass dish. I used my beloved vegan/ no sodium/no sugar/high iron/ pumpkin seed protein powder. I have it delivered each month!
 
I used my vanilla paste, which provides a richer flavor than extract, and also cake batter extract (not listed in the ingredients bc it is not offered in my nutrition calculator). The cake batter really ups the flavor. I used chopped pecans, so I didn’t have to chop them myself!
 
These bars are high fiber, vegan (use nondairy milk), high protein, low sodium, zero added sugar, and just plain good. If you need a bit more sweetness, you can add some zero-sweetened brown sugar. I like Swerve—you do you. A dollop of plain Greek yogurt on top will give you more protein if you wish and I also used my pumpkin spice recipe. Here it is, along with other free spice recipes.
