Notes

Kidney Stone Diet Safe Tips: There is a story behind these protein bars. My friend down the block just had her condo flooded, and obviously, it has been rough. So I made these bars, put them in a wrapper, and tied them up with a purple ribbon (her favorite color). Her dog and Finn are also best friends. They have to go to a hotel for a few days while her place gets dried out, so I thought these would cheer her up in her hotel room for breakfast.

I use this high fiber oat cereal as it is the best. It’s a staple in my meal plan recipes and has excellent fiber, protein and is low oxalate. I have it on subscribe and save I use it so much.

The mold I used to make the perfect bar form is found here. And the wrappers here, along with the purple bakery string. Makes for great gifts. If you do not have a granola mold, use an 8×8 glass dish. I used my beloved vegan/ no sodium/no sugar/high iron/ pumpkin seed protein powder. I have it delivered each month!

I used my vanilla paste, which provides a richer flavor than extract, and also cake batter extract (not listed in the ingredients bc it is not offered in my nutrition calculator). The cake batter really ups the flavor. I used chopped pecans, so I didn’t have to chop them myself!

These bars are high fiber, vegan (use nondairy milk), high protein, low sodium, zero added sugar, and just plain good. If you need a bit more sweetness, you can add some zero-sweetened brown sugar. I like Swerve—you do you. A dollop of plain Greek yogurt on top will give you more protein if you wish and I also used my pumpkin spice recipe. Here it is, along with other free spice recipes.

Wow! I am constantly amazed at how giving you are to your people!!

I have not made these yet… I have to check ingredients for soy protein, to which I’m allergic.
( I avoid protein bars/powders, etc because many of them have isolated soy protein… big no-no for me).
    At any rate, thank you!!!

Please explain the core life ingredient. Is this a boxed mix, a protein powder ? Where do you find this?

I believe it’s liquid, I found it on Amazon so I’m pretty sure you can use whatever milk you like with your own added protein powder. For example I am going to make this using milk with Orgain Collagen which has no flavor but 20g protein per scoop. I’ll add vanilla extract

      Hi Janet,
You can use any milk but I use CorePower Milk shake vanilla by Fairlife. You can google that.

    Hi Jill,

Can any other protein powders be subbed for the pumpkin seed? And since there is stevia in the milkshake additive, can regulate fair life milk or oat milk be used instead? Thanks for the recipe!

      Hi Krista,
The texture might be different (drier) with other protein powders but you can try a whey if you like. Just don’t know how it will be. I like the pumpkin seed bc it has no salt. You can use any milk. In case you ask about the stevia, it has NO oxalate, just the plant does. BUt you may be asking bc you don’t tolerate stevia.

      Hi Michelle,
You can sub out whatever you usually sub banana out for. No problem.

I made these and added 1/4 cup of brown Swerve that you recommend. Those tasted very good! Then I made it without the Swerve and it was just ok, in my husband’s opinion. Thanks Jill!
