I must admit, I have never been a fan of pancakes in the morning. They are highly caloric and might as well be cake. I know. I’m a party pooper. But, I know my patients like to eat them, so I made a healthier recipe to make us happy. There is no added sugar, and they don’t even need any maple syrup (in my humble opinion) because the bananas make them so flavorful. A quick and easy recipe that satisfies that sweet craving you might have in the morning with your coffee!

Kidney Stone Diet Safe Tips: This is a delicious, no-added-sugar, gluten-free, breakfast option. Add some blueberries or blackberries if you want a bit more fiber. I topped with low cal non-dairy cream for an extra bip of happy.

A flourless, no-added-sugar banana pancake recipe that satisfies that sweet craving.

Ingredients

Scale
  • 1 ripe banana
  • 2 large eggs
  • 2 tablespoon ground flax meal
  • 1/4 teaspoon vanilla
  • 1 tablespoon coconut oil

Instructions

  1. Mix banana and eggs together in a bowl until smooth. Add ground flaxseed and vanilla extract; mix the batter well.
  2. Heat coconut oil in a small skillet over medium-low heat. Scoop batter, about 1/4 cup per pancake, onto the skillet and cook until the center starts to bubble, about 30 seconds. Flip pancakes and cook until bottoms are lightly browned, 1 to 2 minutes more. I actually like mine browner than light, but you do you!

    I am a pancake lover, but due to pre-diabetes, I switched it over to a recipe containing ground flax, almond & buckwheat flour, and a Tbsp of cinnamon, etc.. It was great and did not spike my sugar level. And then I was plagued with kidney stones. I have yet to find one that works well with me. Last night I tried a recipe with just oat flour and topped with a smidgen of maple syrup as I usually do with yogurt only this time with blackberries (could have partially been the berries and it sent my sugar up. So, I am going to try this one. I’ll let you know how it goes.
