This simple, tasty salad is another quick way to get your calcium while keeping oxalate intake low. I swapped out the traditional tomatoes used in Caprese salads for sweeter, lower-oxalate strawberries, and, for a little tang, we finish it off with a drizzle of balsamic dressing. Mozzarella is a good lower sodium, higher calcium cheese choice. Make sure to check the different brands as the nutrition content varies. I make this when asked to bring a side dish in summer.

Ingredients
- 15 cut strawberries
- A handful of fresh basil
- 8 ounces mozzarella cheese
- 1 tablespoon of extra virgin olive oil
- 1/2 tablespoons of balsamic vinegar
- Pepper (optional)
- Butter lettuce (optional)
Instructions
- In a bowl, mix together the strawberries, basil, and mozzarella cheese.
- Make the dressing by putting the balsamic vinegar in a small bowl and slowly mixing in the olive oil.
- Add a bit of pepper on top when serving.
- Dress it up by adding butter lettuce.
