  • Author: Jill Harris
  • Prep Time: 10 Minutes
  • Total Time: 10 minutes
  • Yield: 1 Serving 1x

Ingredients

Scale
  • 1/2 cup low-sodium cottage cheese
  • 1 tsp vanilla
  • 1 tbsp no sugar cheesecake jello pudding (the powder)
  • 1/2 cup strawberries
  • 1/2 cup non-fat plain Greek yogurt
  • 1 tsp honey

Instructions

  1. Put all ingredients into mini Cuisinart and blend.

Notes

Kidney Stone Diet Safe Tips: This is a delicious way to start or end your day. The parfaits feel decadent and too good to be true while living a healthy lifestyle and they’re an excellent way to sneak more protein and calcium into your day.

I used my trusty mini Cuisinart, which I love because it is so simple to clean and doesn’t take up much room in my tiny kitchen. Big city life means little apartment living! You can stick it in the freezer for an hour so it firms up to have cheesecake consistency.

I got the sugar-free cheesecake jello pudding on Amazon because I couldn’t find it at my grocery store and I also used vanilla bean paste, but my nutrition app doesn’t have that listed, so vanilla extract is listed in the ingredients list. The vanilla bean paste is so much richer and doesn’t have that alcohol aftertaste. Get it here.

I crushed some graham crackers on top for a more authentic cheesecake taste, but you don’t have to. I know I have been on a roll with these parfaits, but they are so darn good and fun to make. AND EASY.

And the vintage mugs with the golden spoons complete the festivities. They are my go-to for parfaits and overnight oats. I love that they have a cover! I am getting rather fancy these days, aren’t I? You can buy your own and be fancy with me!

And remember, I am an Amazon affiliate, and I may make a few cents on what you purchase at NO extra cost to you. But I promise, the stuff I suggest is what I use in my kitchen, and you will love it in yours.

SO GOOD! And it’s quick and easy to make, which is a plus for this non-cook. Thanks, Jill!

This will probably sound stupid, but do you make the Jello pudding per the instructions on the Jello box and then use a tsp of it for one of the parfait ingredients, or do you simply put a tsp of the Jello powder in the blender with the other ingredients?

“The Kidney Stone Diet is far more than just a diet; this plan is life-altering!”

“The group calls will transform you physically and emotionally. Once you start this journey, your health naturally improves. I have lost a total of 40 pounds and have consistently kept it off. The group calls are such support; this is more like family than a zoom meeting to stay accountable. Jill is far more than a nurse; she is a life coach. Her platform is invaluable.”

Kim J. | Kidney Stone Prevention Course

“The best decision I’ve made has been to join this group.”

“I have been working on weight loss for many years. This group has kept me on track and has helped my continued success with my weight loss.”

Kate L. | Group Calls with Jill

“I have been following the Meal Plan for about 6 weeks and I feel amazing.”

“Eating healthy has also encouraged me to go to bed earlier, so I am also getting more sleep. Because of that, I have been able to get up before work and exercise! So yes, the positive effects are spilling over into all areas of a healthy lifestyle.”

Jerry T. | Meal Plan Subscriber

“I have been a part of the group calls with Jill for the last 14 months, and they are essential to being so successful with the Kidney Stone Diet Prevention Plan.”

Sarah B. | Group Calls with Jill

“These calls are the gold of this program!!”

“I can’t say enough about how Jill knows just the right questions to ask us or how she prods us to think about what is going on in our lives.”

Monica K. | Group Calls with Jill

“I took the course with Jill, and my second 24 hour urine was MUCH better than the first.”

“She gives very practical information, and it WORKS. I was totally overwhelmed at first. I got very poor diet information from my doctors. Jill made it easy for me to understand, and I took it one day at a time. I still watch her videos when I need a tune-up. Jill is the best, and she really cares about all of us. Take the course—it will help you!!!”
