Ingredients

  • 1/2 cup low-sodium cottage cheese
  • 1 tsp vanilla
  • 1 tbsp no sugar cheesecake jello pudding (the powder)
  • 1/2 cup strawberries
  • 1/2 cup non-fat plain Greek yogurt
  • 1 tsp honey

Instructions

  1. Put all ingredients into mini Cuisinart and blend.

I used my trusty mini Cuisinart, which I love because it is so simple to clean and doesn’t take up much room in my tiny kitchen. Big city life means little apartment living! You can stick it in the freezer for an hour so it firms up to have cheesecake consistency.

I got the sugar-free cheesecake jello pudding on Amazon because I couldn’t find it at my grocery store and I also used vanilla bean paste, but my nutrition app doesn’t have that listed, so vanilla extract is listed in the ingredients list. The vanilla bean paste is so much richer and doesn’t have that alcohol aftertaste. Get it here.

I crushed some graham crackers on top for a more authentic cheesecake taste, but you don’t have to. I know I have been on a roll with these parfaits, but they are so darn good and fun to make. AND EASY.

And the vintage mugs with the golden spoons complete the festivities. They are my go-to for parfaits and overnight oats. I love that they have a cover! I am getting rather fancy these days, aren’t I? You can buy your own and be fancy with me!
