- 2 teaspoons vanilla whey isolate
- 2 teaspoons pumpkin purée
- 1/4 teaspoon pumpkin pie spice
- 1/8 teaspoon vanilla paste
- A few drops of water only if needed
The Fluffy Vanilla-Peanut Yogurt Frosting
- 2 tablespoons nonfat plain Greek yogurt
- 1/2 tablespoon PBfit PURE
- 1/2 teaspoon vanilla whey isolate
- Tiny drop of vanilla paste, optional
- Pinch of pumpkin pie spice for the top
Instructions
The Bar
- Mix the PBfit, vanilla whey isolate, pumpkin purée, pumpkin pie spice, and vanilla paste into a thick paste.
- Add only a few drops of water if the mixture is too dry.
- Gently fold in the pea crisps.
- Press firmly into a square.
- Refrigerate until firm about 15 minutes (or if you want you COULD skip this part)
The Fluffy Vanilla-Peanut Yogurt Frosting
- Mix the Greek yogurt, PBfit, whey isolate, and vanilla paste until smooth and fluffy. Spread over the chilled square right before eating so the pea crisps stay crunchy. Finish with a pinch of pumpkin pie spice.
- No added sweetener needed because the vanilla whey already provides sweetness.
Notes
I wanted to create a high-protein bar that vegetarians could use without relying on ingredients that are especially high in oxalate. I found this pea crisp product, which gives the bar a big protein boost and some crunch.
I also use this peanut butter powder because it has no added sodium, and this whey isolate protein powder because it works well for my stomach and I like the taste.
You can use vanilla extract, but I find vanilla paste brings a much richer flavor. I use this one.
To make the bar vegan, swap the whey isolate for a vegan protein powder and use a non-dairy yogurt for the frosting.
You don’t have to chill it, but I do because I like everything chilled. So skip that if you like.
This is a lower-calorie, high-protein option that can still fit nicely into a lower-oxalate diet. Just watch the sodium. The pea crisps and protein powder contribute most of it, but the total is still very manageable. I simply account for it in the rest of my day.
I do not eat these every day, but I like having them as an option when I am a little short on protein, especially after a workout or with my morning coffee.
You can also eat the pea crisps on their own to add protein and crunch to yogurt, cereal, salads, and smoothie bowls. I notice a bit of an aftertaste, so I don’t love eating them straight from the bag. In a recipe like this, though, the other flavors help cover it nicely.
And yes, I am already experimenting with a PB&J Power Square next. So stay tuned!!!
