Valentine’s Day Protein Packed Parfait

- 4 tart cherries
- 1 tsp vanilla extract
- squirt of lime juice
- 1/2 scoop Vanilla Egg White Protein powder
- 1/2 cup non fat plain Greek yogurt
- 1/2 cup Farmer’s Cheese
- mint sprig
- 1/8 cup chopped unsalted Pistachio nuts
- Gather Farmer’s cheese, yogurt, protein powder, a squeeze of lime juice, and vanilla and mix in a small Cuisinart or blender.
- Chop pistachios
- Put mixed ingredients in a cup and top with cherries, and a tiny bit of lime zest, and chopped pistachios. A sprig of mint will be the surprise hit! Don’t skip it!

I have been making a version of this for a long time, but this topping combo really made me happy. Because of the bright red cherries, Finn (my pup) thought it was great for Valentine’s Day (as it is coming up), so here is our gift for YOU!
I used egg white protein powder, but you can use what you like. I use this baby Cuisinart, and I love the ease of it. I hate cleaning my big one, but this tiny one is so much more doable. The cherries I used were a mixed bag of tart and sweet, and the lime and mint sent it over the top with deliciousness. Don’t skip on the fresh mint!
And the star of this for me is the adorable yet practical jars I use! They have a cover and come with a gold spoon. I LOVE THEM. You can find them here. They can also be used for coffee and are so beautiful when people come over or just for yourself!
I used vanilla bean paste instead of extract, but you do you. I get my vanilla bean paste here. It adds a richer flavor, and I love seeing the vanilla bean specks in these parfaits. More decadent to me!
I love these vintage mugs for this recipe because I sometimes put these parfaits in the freezer to firm them up to have the consistency of “cheesecake.” I put them in the freezer with the cover (that is why I say these mugs are practical) for about an hour. I LOVE THIS and you will too.
P.S. If you want the parfait to be lower in calories, ditch the protein powder and use low sodium cottage cheese!
