Ingredients

  • 1 Teaspoon vanilla
  • 12 Pistachio nuts
  • Lilly’s butterscotch chips
  • 1/8 Cup Canned Pumpkin
  • 1/2 Cup Peanut Butter
  • 1/2 Teaspoon Pumpkin Pie Spice
  • 56 Grams Egg white protein powder
  • 1/8 Cup Walden Farms sugar free Pancake syrup

Instructions

  1. Mix all ingredients together in a bowl.
  2. Refrigerate for 2 hours, may even freeze if still sticky.

Kidney Stone Diet Safe Tips: Now, usually, I am not a fan of meal replacement bars, but one must be honest and know that sometimes we all skip a meal and need a bar that is higher in calories. This fits the bill. This bar is high In protein and fat and will keep you satisfied until your next meal (I see you keto friends).

I will admit these bars are sticky. I just took them out of the refrigerator as I was getting them to set but decided they were not firm enough for me so I put them in the freezer overnight. I had one for breakfast! 

For my patients looking for EXTRA calories in the day, this bar is a great snack!

You can omit the salt and choose chocolate or white chocolate chips (if you can’t find the butterscotch chips) or sunflower seeds on your bar. The chocolate will add a bit of oxalate, so only use a few.

For chocolate chips, I like Lilly’s. And here are the butterscotch ones, too. This is a good snack or breakfast bar to pair with your calcium beverage.

I used egg white protein powder, but you use what you like. Your kitchen, your rules!
