But remember that you have 100 mg/day (unless your doctor has told you otherwise) and you will have this with a calcium-containing beverage and watch your oxalate throughout the day. NO PROBLEM. I crave this breakfast once in a while, and I really consider it a treat.
Choose whatever bread you like. When choosing bread, pay attention more to sugar and salt. Don’t worry so much about not knowing the oxalate as there isn’t very much in two slices of bread.
You can also choose regular maple syrup since it’s a small serving. YOU DO YOU! I use this PB powder because it has less sugar and calories than most.
You’ll see that I have raspberries as my garnish, which are higher in oxalate. But there are very few and I’m pairing this meal with my unsweetened non-dairy coconut milk. Not worried about it. What we do everyday matters, not a special meal here and there.
Diabetics, you might want blackberries on top bc they will have less sugar. Or perhaps this dish is just too high in natural sugar for you. If so, instead of the bread and bananas, use the PB maple drizzle on top of some greek yogurt.
