Low Carb Turkey Roll-Up

Ingredients

  • 4 slices low sodium turkey
  • 2 tbsp plain, low fat, greek yogurt
  • 2 slices swiss, halved or quartered
  • 1/2 cup shredded or chopped lettuce
  • 1/2 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced
  • 2 slices cooked bacon
  • ground black pepper

Instructions

  1. On a clean work surface, place two slices deli turkey and spread a thin layer of greek yogurt on top. Top with 1 slice swiss, half of the lettuce, tomato, red onion and avocado, and 1 slice bacon. Season with pepper.
  2. Roll up and secure with toothpick, then repeat with remaining ingredients.
