Chicken Salad Stuffed Avocado

Ingredients

  • 1 tablespoon of cilantro
  • 3 ounces chicken (can make own or use rotisserie)
  • 3 cherry tomatoes
  • 1 tablespoon goat cheese
  • 1/2 avocado

Instructions

  1. Cut one ripe avocado in half and scoop into bowl. Save the shell as you will use it for serving.
  2. Add 3 ounces of cooked chicken (store-bought rotisserie works great!) and mix with avocado.
  3. Cut up and mix in three cherry tomatoes.
  4. Put mixture back into empty avocado shell.
  5. Top it off with goat cheese and cilantro.
