I know this might seem like too much work, but I promise you it is so easy. Not only easy but darn good too. All my recipes are kidney stone diet compliant, tasty, and quick. Can’t beat it. Feel free to sub out the cheese for one you prefer, but pay attention to the amount of sodium in cheeses. It adds up quickly. Let me know what you think of this one!

Ingredients

Scale
  • 1 large head cauliflower, grated (about 3 cups), squeezed dry of excess liquid
  • 2 1/2 c. shredded mozzarella, divided
  • 2 large eggs
  • 1 Teaspoon garlic powder
  • Freshly ground black pepper
  • 3/4 Tomato
  • 1 Tablespoon Italian seasoning
  • Fresh basil, for garnish

Instructions

STEP 1
Preheat oven to 425º and grease a cast-iron skillet with cooking spray. In a large bowl, combine cauliflower, 1 cup mozzarella, eggs, and garlic powder and season pepper.

STEP 2
Press mixture into skillet, making sure to get up the sides and bake until deeply golden and dry, 25 minutes.

STEP 3
Slice up the fresh tomato and put on top of the crust and sprinkle with the remaining mozzarella.

STEP 4
Sprinkle with basil, slice, and serve.

      Hey Ashley,
      I wouldn’t even call it “cheating.” You can easily have up to 100 mg/ox/day unless your doc has told you otherwise. Make sure you get my oxalate food list which explains HOW to use the oxalate list. Kidneystonediet.com/start

      Hi Michael,
      I would say to cook it longer but watch it so it doesn’t burn. Also, make sure you drain all the water you can out of the cauliflower.
